Tis oyster season on the Emerald Isle. No better place to enjoy them than at WB’s Cafe in Sligo. As always in Ireland, the staff is as charming as the day is long. WB’s closes at 4 pm, but I think it’s closer to 3. Oysters aren’t a bad way to start the day

The value for oysters and cheese platter were great. The experience is a short video of the farm and a meeting with the owners/farmers. The oysters themselves compared very favourably to US northeast oysters, which were the best I had previously.

As a local I had no idea about the location or even the size of the farm. We learned all about the growing and quality processes, their markets (all export) and the equipment and technology needed to make it all happen.
